Safbrew T-58
A specialty ale yeast selected for its estery, somewhat peppery and spicy flavor. This yeast forms a solid sediment at the end of fermentation, and is widely used for bottle and cask conditioning. Although it is a Belgian yeast strain with all the accompanying characteristics it is a great choice for Wit and Wheat style recipes. Attenuation is high with low flocculation and a high alcohol tolerance (about 8.5%). One packet is sufficient for 5 gallons.
