Montrachet yeast promotes quick starting fermentation by rapidly settling into the must following rehydration. Alcohol tolerance is relatively strong, until about 15% by volume, as well as temperature tolerance, working between 59F and 95F. Montrachet also has high resistance to nutritionally deficient musts (low nitrogen) and other difficult environments such as highly clarified musts and those high in SO2 content.
Montrachet is fairly neutral with regard to aromatic production. The varietal used will be highly transparent in the finished wine. Wines will exhibit low volatile acidity and acetaldehyde.
