Specialty MaltFlaked Rye lends a uniquely spice aroma and flavor to beer. Similar to other un-malted grains, flaked rye must be mashed with base grains in order to achieve conversion. It has been pre-gelatinized so the grain can be added directly to the mash without any cooking steps. In lower amounts, rye helps promote head retention, body, and dryness. In larger amounts, rye can begin to exhibit even more of its flavor characteristics, but requires special mashing techniques as it can greatly increase the viscosity of your wort as well as create impermeable layers inside the grain bed.
